Cathedral Coffee is one of the beloved local roasters we follow in Oregon: an independent roaster based in Portland, founded in 2013. Here is what their own pages and public sources say about them, in our words.
Their story
Cathedral was set up in Portland in 2013 and began as one small cafe. Hospitality and human connection are the values it puts first. The cafes also carry loose leaf tea from Herald Tea Co, local art that rotates, used books and brewing gear. Its values page lists connection, service, intentionality, contribution, stewardship and excellence, and promises to honor guest requests such as a syrup in a latte rather than refuse them on taste grounds.
The roastery grew out of the first cafe's following, and it now sells two subscriptions: a Classic plan built on the House Blend and a Fancy plan for more unusual lots. The House Blend, from Brazil and Guatemala, is the main coffee in the cafes' lattes. Single origins have included a thermal shock Tabi from Huila, Colombia, and a washed Red Bourbon from Rwanda. Profits from its limited Fruit Cake holiday blend go back to the producers, one of whom is Colombian grower Sebastian Ramirez.
What they roast
House blends include House Blend, Panhandle Blend and Fruit Cake Holiday Blend. Single origins on the list when we checked: Sumatra Gayo, El Mirador (Huila, Colombia), Los Pirineos (El Salvador), Nyabumera (Rwanda), La Roca (Tolima, Colombia), Bombe Station (Sidama, Ethiopia) and El Suspiro (Nicaragua). Each cafe is meant to reflect its own neighborhood, and the spaces host rotating work by local artists alongside tea from Herald Tea Co.
