Their story
Dapper & Wise is a roaster in downtown Hillsboro, working from behind its sister company, the cafe Insomnia Coffee Co. It sets out its goals plainly: source and roast the best coffees it can find, keep getting better as an employer and a coffee buyer, be kind to everyone it deals with, and teach customers about coffee without pretension. It buys much of its coffee from Cafe Origenes, a cooperative whose farmer members launched their own co-owned roasting company, a step that lets growers take on more of the supply chain such as milling. That coffee goes into the Stag Espresso and Bonfire blends and the single origin menu.
Its single origins are seasonal and named for the producer, such as a washed Pink Bourbon lot from Edilma Piedrahita in Colombia. The range runs from light blends built from its African and Latin American single origins to Bonfire, its darkest roast, and it also makes instant coffee and canned coffee.
What they roast
Roast levels run light and dark. House blends include Stag Espresso Blend (house espresso, dark), Tortoiseshell Blend (top selling dark roast), Bonfire Blend (darkest roast), Highbrow Blend (light), Fruit Snacks Blend (light) and Yungas Lacco Valley Blend. Single origins on the list when we checked: Colombia Edilma Piedrahita (washed Pink Bourbon), Colombia Miller Nunez, Guatemala Javier Martinez, Tanzania AB Communal Shamba, Ethiopia Natural Halo Beriti, Burundi Washed Incuti and El Salvador Finca Santa Isabel. Stag Espresso Blend, a dark roast of Nicaraguan and Peruvian coffees; also a decaf version. Decaf Colombia Guarapo Field Blend, sugarcane process, plus Decaf Stag Espresso Blend.
