Their story
Paul Doyle and his son Kevin grow coffee on a 14-acre farm near Marsella, in Colombia's Risaralda department. Beans from their farms are roasted to order at the company's roastery in Portland. The Doyles came to coffee as coffee and wine lovers who fell for Colombia on a trip and bought land there. Varieties on the farm include Sudan Rume, dwarf Gesha, Bourbon, Typica and Ethiopian heirloom.
A longtime friend and partner named Noe manages the farms and staff day to day, and helped Paul plant the coffee and shade trees by hand. Processing leans on experiments such as carbonic maceration, a method borrowed from red wine, and drying on tiered raised beds under cover where heat and humidity can be controlled. Green coffee is flown from Colombia to the company's US facility for roasting, and roasting happens every two weeks, only to order.
The shop says a natural carbonic Gesha lot from Marsella was the base for 2026 Brewers Cup titles in Italy and France, and it lists its Gesha Hybrid as a 2026 Good Food Awards winner.
