Never Coffee is one of the beloved local roasters we follow in Oregon: an independent roaster based in Portland. Here is what their own pages and public sources say about them, in our words.
Their story
Never describes itself as a colorful Portland cafe and roaster known for inventive drinks. It has marked 150 signature latte creations. Roasting happens every two weeks, and orders ship Monday through Saturday. The first Never shop sits on Belmont Street in Southeast Portland's Sunnyside neighborhood. A downtown cafe followed in 2019 and has hosted DJs, according to Wikipedia.
A lab behind the cafes is where staff cup, test and work out new ideas. The company blends single origin coffees to build distinct flavor profiles and keeps standalone single origins under its Oh! label. During 2020 the team wrote an internal team book with guidance from outside equity advisers. The FAQ states a commitment to anti-bigotry and invites critique from the community.

Signature lattes include the Holy Grail, sweetened with cherrywood smoked honey and finished with pepper and sea salt, and the Hug, spiced with cacao, chili and cinnamon. Its Midnight Oil syrup combines black licorice, fennel seed and star anise. Reader's Digest chose Never to represent Oregon in a 2024 state by state coffee shop roundup, Wikipedia notes, and recommended the Flowers blend. Local artists fill the cafe walls, and a curation team takes requests from those who want to show work there.
