Seven Virtues Coffee Roasters is one of the beloved local roasters we follow in Oregon: an independent roaster based in Portland, founded in 2007. Here is what their own pages and public sources say about them, in our words.
Their story
Family owners have run this Portland roaster and cafe business since 2007. It works only with single-origin coffees drawn from recent harvests. The name stands for seven values the owners say guide the business: kindness, honesty, humility, gratitude, patience, compassion and forgiveness. Besides whole bean coffee, the lineup includes an instant coffee, canned cold brew and a Roaster's Choice subscription.
Owner Mike Blair opened a second shop in June 2015 inside The Zipper, a Kerns neighborhood building of small eateries on a former used car lot at Sandy Boulevard and NE 27th. It was the first of seven businesses to open there. At that time the beans were roasted on a 12 kilo Probat at Aspect Coffee Collective, a shared roasting space in Portland, Daily Coffee News reported. Wholesale was kept small, limited to a few espresso accounts and events.

Why buying from Seven Virtues Coffee Roasters matters here
In 2015 the original Glisan Street cafe ran a full breakfast and lunch menu with vegan and gluten free baking done in house. The smaller Zipper shop leaned on grab and go breakfast such as bagels and pastries.
Every bag bought from a Portland roaster pays roasting and cafe wages in Oregon, and the coffee reaches you days after roasting instead of months. That is the reason the club exists. Why local roasters matter.
