Spella Caffè is one of the beloved local roasters we follow in Oregon: an independent roaster based in Portland, founded in 2006. Here is what their own pages and public sources say about them, in our words.
Their story
As a boy in Chicago, Andrea Spella lived over a European bakery his grandmother ran, and stovetop espresso with a pastry after school was routine. He spent years apprenticing in Colorado under Allegro Coffee's Kevin Knox and Paul Songer. A coffee cart came first, before the first caffe opened. Spella roasts in the Italian style and uses the trademarked name Tostatura Media Dolce, or Medium Sweet Roast, for its approach.
Andrea Spella started the company in October 2006. Most roasting happens on Rossalina, a US Roaster Corp machine that holds 5.5 kilos, at Spella's own Southeast Portland roastery. In 2022 Spella teamed with Cascadia Coffee Roasters and Sterling Coffee on a shared Northeast Portland roastery with an 18 kilo roaster. Spella told Daily Coffee News that the other two founders had once apprenticed with him. After the pandemic closure the company reopened in an office lobby at Harrison Square in late 2022. In 2023 it added a 200 square foot standing espresso bar near Pioneer Square, two blocks from its first downtown address.

Shots at the downtown bar come from a refurbished three group Rancilio lever machine, per Daily Coffee News. A cafe inside Woodblock Chocolate in Irvington opened in 2024 and closed on July 27, 2025, as Spella chose to focus on downtown.
