Cerberus Coffee is one of the beloved local roasters we follow in Oregon: an independent roaster based in Jacksonville, founded in 2019. Here is what their own pages and public sources say about them, in our words.
Their story
The company opened in 2019 to roast small batches for southern Oregon, with inclusion and fair pay to farmers as stated aims. Co-owner Cody spent over 15 years in coffee, including wholesale work for a Bay Area roaster and judging barista competitions. Cody got hooked on espresso in 2007, later ran wholesale for Highwire Coffee Roasters and catered TED Talks, and picks the green coffees roasted here.
Co-owner Tina handles quality control, staff training and house syrups, and bakes items such as vegan donuts and overnight focaccia. The company says it is open about farmgate prices and pays above Fair Trade minimums for its green coffee. The Cerberus name came from a dog the owners once took in, which they describe as impossibly large.
What they roast
Roast levels run light, light-medium and dark. House blends include Wizard Cat Blend, Constellation and 9 to 5 Dark Roast. Single origins on the list when we checked: Rwanda Nyungwe Site Anaerobic Natural, Mexico APG Community Lot and Ethiopia Anasora Site Natural. Decaf: Slowride Decaf. It describes its cafe as a gathering spot for the Applegate Valley and Jacksonville regulars. The cafe and micro-bakery fills only about 600 square feet in historic Jacksonville and bakes in a stone deck oven every day of the week. Its shelves stock other regional names, including Blue Willow and Smith Tea, next to brewing gear from Fellow and Aeropress.
