Noble Coffee Roasting is one of the beloved local roasters we follow in Oregon: an independent roaster based in Ashland, founded in 2007. Here is what their own pages and public sources say about them, in our words.
Their story
Noble started in 2007 in founder Jared Rennie's garage, with a Probat L12 roaster and a pallet of green coffee from around the world. Rennie had worked in coffee years earlier, left for another career, and came back after years of experimenting with roasting, brewing and espresso at home. He named the company after his grandfather, Noble Dukes, and built it around quality, service and sustainability. Rogue Valley restaurants, cafes, hotels and bed and breakfasts soon began serving the coffee. As wholesale grew, Rennie opened the Noble Coffeehouse and Roastery on 4th Street in Ashland's historic Railroad District in May 2009.
Noble buys green coffee from organic farms and cooperatives and sells itself as fresh, organic, handcrafted coffee. Education is part of the mission: it wants home and professional baristas to know how to brew what it roasts. Food and Wine magazine named Noble the best coffee in Oregon in 2018 and 2022, and the company lists competition finalists and winners for its single origins, many of them Ethiopian lots, most years from 2011 to 2022.
What they roast
Roast levels run dark (Daydream). House blends include World Tour (classic espresso), Pompadour (elegant espresso), Mokha Java (classic blend) and Daydream (darkly roasted blend). Single origins on the list when we checked: Ethiopian Shefina, Rwandan Mbilima, Mexican Ki-Saya (single origin espresso), Honduran Mercedes and Brazilian Fortaleza. World Tour and Pompadour espresso blends, plus a single origin espresso from Mexico. Decaf Ethiopian Sidama and Decaf World Tour espresso blend, both water processed. Where to drink it
The Noble Coffeehouse and Roastery in Ashland's Historic Railroad District is open seven days a week, 7am to 5pm, year round. Roasting, packing and brewing all happen there.

Why buying from Noble Coffee Roasting matters here
The coffeehouse sits in Ashland's Historic Railroad District, and Noble describes itself as serving retail and wholesale customers across the Rogue Valley. Each month the coffeehouse runs a four class coffee series, from seed to cup through latte art, at $25 a class; it is free for wholesale partners and their staff. Early local support came from Rogue Valley restaurants, cafes, hotels and bed and breakfasts that put Noble on their menus.
Every bag bought from a Ashland roaster pays roasting and cafe wages in Oregon, and the coffee reaches you days after roasting instead of months. That is the reason the club exists. Why local roasters matter.
