Their story
Owned and run locally, the company buys organic beans at fair trade prices and lets each origin's character lead the roast. Beans rest at least 48 hours to degas before delivery, and the menu stays short, built around single origins plus a house espresso. The roaster says it ignores trends and social media favorites, keeping a short menu of profiles it likes and aiming for a cup that is neither bitter nor sharp.
Its house espresso, REDWOOD, blends South American, Central American and South Pacific beans for a smooth, low-acid shot, and the cafe pulls it at a 1 to 2.5 ratio. Current single origins include an organic natural Guji from Ethiopia's Kayon Mountain farm, a Huehuetenango lot from the Guaya'b co-op, and a Brazil from producer Carla Giacchero's Cafe Delas. Broken Top, its decaf, is a Swiss Water coffee from Papua New Guinea roasted to a medium level.

Roast levels run light-medium, medium and medium-dark.
