Prismatic Coffee Roasters is one of the beloved local roasters we follow in Oregon: an independent roaster based in Salem, founded in 2022. Here is what their own pages and public sources say about them, in our words.
Their story
Evan Delgado and Ariel Ellis became friends when Ariel was a regular at Evan's cafe. They planned the roasting company during the pandemic. Before Prismatic, Delgado spent more than a decade as co-owner and manager of a Salem cafe. He sets the company's roasting, brewing and sourcing standards. The name draws on the coffee taster's flavor wheel and on the variety of people around them.
Delgado and Ellis founded the company in December 2022, starting with wholesale roasting and canned cold brew. From summer 2023 a teal Citroen coffee truck parked on weekdays in downtown Salem for close to a year. Delgado was earlier the roaster and a co-owner of The Governor's Cup. By early 2025 partner Kyle Layton had taken over roasting on the Gov Cup's Probat P12, while a new Diedrich IR-5 waited to go in behind the cafe.

House blends include Moon Dog Espresso Blend. Single origins on the list when we checked: Rwanda Mutovu and Colombia Narino Buesaco. Espresso: Moon Dog Espresso Blend. Decaf: Slow Poke Organic Decaf. Offerings change with the seasons, so this is what their own pages listed on 2026-09-28.

The first Prismatic cafe opened in early 2025 in South Salem's Pringle Creek community.

Through weekly concerts he hosted for nearly a decade, Delgado helped make Salem a regular stop for touring bands, and the company backs local music and art. The cafe fills a roughly 90 year old former carpentry workshop at Pringle Creek, a development of gardens and LEED certified homes. One room holds The Library of Black Excellence, a lending collection of books by and about Black authors. The company works with 1% for the Planet and, according to Daily Coffee News, was gathering data toward B Corp certification in 2025.
