Shalom Coffee Roasting is one of the beloved local roasters we follow in Oregon: an independent roaster based in Brookings, founded in 2024. Here is what their own pages and public sources say about them, in our words.
Their story
Three brothers started the roastery in spring 2024 so they could drink and share fresh coffee every day. Brother Zac was paralyzed in a 2020 surfing accident in their hometown, and making coffee was among the first skills he regained on his own. Shalom is the Hebrew word for peace, which the brothers chose to reflect the connection they hope coffee brings.
Buku is a natural process coffee from smallholders in the Guji Zone of southern Ethiopia, grown at 2,100 to 2,300 meters by Guji Oromo farming families. Cerro Las Ranas, named for a farm lagoon full of frogs, is a honey process coffee from Apaneca, El Salvador, made by the Salaverria family's JASAL operation. Shulamite, the house blend, combines Central and South American coffees at a darker roast and is suggested for espresso as well as pour over.
The brothers say they buy from small lot farms and cooperatives in places like Ethiopia, Colombia, Guatemala, Kenya, Rwanda and Honduras. Zac broke his C5 and C6 vertebrae and spent months in hospitals around the country; the brothers now describe coffee as the way he puts his skills to work.
