What is organic coffee?
Organic coffee is coffee grown and processed without the synthetic chemicals that organic rules prohibit, such as certain pesticides, herbicides and synthetic fertilizers, and certified by an approved body. In the U.S., the USDA's National Organic Program sets the rules, and imported coffee must be certified before it is sold here as organic.

Trailhead in Portland is a useful counterpoint. It describes its coffees as organically or sustainably sourced but skips the USDA organic label because of the cost, and says many sustainable farmers are in the same position. A missing label is not proof a coffee was sprayed; it can mean a farm or roaster did not pay to certify.

What the organic label requires
Wikipedia's article lists the main U.S. requirements for imported organic coffee:
- The land has had no synthetic pesticides or other prohibited substances for 3 years before harvest.
- There is a buffer between the organic coffee and the nearest conventional crop.
- The farm has a crop rotation plan to prevent erosion, keep soil nutrients and control pests naturally.
Fertilizer has to be organic too: chicken or cattle manure, compost, and coffee pulp, the fruit left over from processing, returned to the soil. Synthetic nitrogen, phosphate or potash rule a crop out. After harvest, the Organic Foods Production Act governs how the beans are handled.
What organic does not promise
The label is about farming practice, not health claims. Wikipedia quotes a former vice-chair of the U.S. National Organic Standards Board saying organic labels are not statements about healthiness, nutritional value or safety. The standards also allow exemptions, so a certified product is not guaranteed free of chemical residues. And organic says nothing about what the farmer was paid; that is what fair trade and direct trade address.

Where organic coffee comes from: Wikipedia cites CATIE, a Costa Rican research center, for the figure that 75% of the world's organic coffee comes from Latin America, and names Peru as the leading exporter as of 2010.
