What is single origin coffee?
Single origin coffee is coffee grown within a single known geographic origin, sold without blending in coffee from anywhere else. The origin runs from a whole country down to one field on one farm, picked on one day. Because nothing else is mixed in, the cup tastes of that place, its coffee variety and the way the harvest was processed.
How single origin works: three levels
Wikipedia's single-origin coffee article describes three levels of designation, from widest to narrowest:
- Country. A whole producing nation, such as Brazil, Colombia or Vietnam.
- Estate or region. Coffee grown on one farm, which can run from a few acres to a plantation many square miles across.
- Micro-lot. A single field on a farm, a small range of altitude and a particular day of harvest.
Many Oregon specialty roasters label at the estate or producer level and name what they can: the producer, the region, the variety and the process. That traceability is part of the appeal. Wikipedia notes that single origins let coffee shops add value by highlighting where a coffee came from.
What single origin tastes like
There is no single taste, which is the point. A single origin shows its origin and its processing. The National Coffee Association says washed coffees may have floral, sour or citrus notes and are described as clean, while natural process coffees have a fuller body and a sweet, fruity profile. Roast level matters too: a light roast leaves the most of the origin in the cup.
Single origins also change with the calendar. When a harvest sells out, the bag is gone until the next one, and next year's lot is a new harvest.

Oregon roasters that list single origins
Every Oregon roaster we list sells at least one single origin. Here are some of them, from their own pages, checked 2026-09-27. A listing does not mean a roaster is part of the club or in any box.
- Roseline in Portland lists Honduran lots from Joel Guzman, including a Geisha that belongs to the Picker's Project, which Roseline describes as a program that brings farm workers into the coffee economy.
- Dapper & Wise in Hillsboro names its seasonal single origins for the producer, such as a washed Pink Bourbon from Edilma Piedrahita in Colombia.
- Heart in Portland lists three Kenyas and three Ethiopias, and gives each its own roast profile instead of a light, medium or dark label.
- Backporch in Bend sells a Mexico Las Lajas Yellow Honey and keeps its single origins at the lighter end of its range.
- Wandering Goat in Eugene sells a washed Ethiopia Yirgacheffe and a natural Ethiopia Guji, a simple pair for tasting the difference processing makes.
- Trailhead in Portland says its Guatemala has been its most popular coffee since 2009.
- Noble in Ashland roasts Ki-Saya from Mexico as a single origin espresso.
