Coffee in Central Oregon
By its own account, Central Oregon's specialty coffee started in a log cabin. Sisters Coffee Company has been family owned since 1989, when its founders began roasting in a small cabin in Sisters, and it calls itself Central Oregon's first specialty coffee roaster. In Redmond, Junction Roastery roasts in the restored Patrick Building downtown. Bend has its own page; this one covers Sisters, Redmond and Madras. Central Oregon's coffee story
The first chapter belongs to the Durham family. Winfield and Joy Durham moved to Sisters and started roasting in a small log cabin with a five pound roaster, and the family has run the company since 1989. It says it became Central Oregon's first specialty coffee roaster by growing one customer relationship at a time. More than three decades later their sons run it.
Roasting in the high desert has its own problems. Sisters Coffee says the seasonal temperature swings change how heat behaves in the roaster, so its roast profiles need constant adjustment, and the team cups coffees five days a week to keep up. Its old 25 kg Probat, nicknamed Ruby for its red color, ran from 2005 until the move to a new facility with a 45 kg Probat.
Redmond's roaster chose an old building. Junction Roastery works out of the restored Patrick Building in historic downtown Redmond.
Coffee money in Central Oregon also goes into the community. Thump, a Bend roaster, funds Thump Lacrosse, an off-season club lacrosse program for Central Oregon players in men's and women's leagues.
